Vegan Strawberry Linzer Cookies: The Easiest Mother’s Day Treat

Description

Delicate and delicious vegan strawberry linzer cookies with a buttery crumb and sweet strawberry filling.


Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup almond flour
  • 1 cup vegan butter, cold and cubed
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 tablespoons plant-based milk (such as almond or soy)
  • 1 cup strawberry jam (ensure it’s vegan)
  • 1 tablespoon lemon juice

Instructions

  1. In a large bowl, whisk together the all-purpose flour, almond flour, sugar, and salt.
  2. Add the cold, cubed vegan butter to the flour mixture. Use a pastry blender or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Stir in the vanilla extract and plant-based milk. Mix until a dough forms. If the dough is too dry, add a teaspoon more of plant-based milk at a time until it comes together.
  4. Divide the dough in half. Flatten each half into a disc, wrap in plastic wrap, and chill in the refrigerator for at least 30 minutes.
  5. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. On a lightly floured surface, roll out one disc of dough to about 1/8-inch thickness. Use a linzer cookie cutter (or two differently sized cookie cutters) to cut out cookies. Cut out solid cookies and cookies with a cutout center. Be sure to make an even number of both!
  7. Place the cookies on the prepared baking sheet and bake for 10-12 minutes, or until the edges are lightly golden brown.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. While the cookies are cooling, prepare the filling. In a small bowl, mix together the strawberry jam and lemon juice.
  10. Once the cookies are completely cool, spread a spoonful of the strawberry filling onto the flat side of a solid cookie. Top with a cutout cookie, gently pressing them together to create a sandwich.
  11. Dust the tops of the linzer cookies with powdered sugar, if desired.
