  • 1 tbsp olive oil
  • 1/2 tsp garlic powder

  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1/2 cup sliced onion
  • 1 cup snow peas
  • 1/2 cup soy sauce
  • 1/4 cup water
  • 1/4 cup brown sugar, packed
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tbsp cornstarch
  • 1 clove garlic, minced
  • 1/2 tsp ground ginger

Instructions

  1. 1. Prepare the Chicken: In a bowl, toss the chicken pieces with olive oil, garlic powder, ground ginger, salt, and pepper.
  2. 2. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. 3. Sauté the Vegetables: Add another tablespoon of olive oil to the skillet. Add the sliced bell peppers, broccoli florets, carrots, and onion. Cook until the vegetables are tender but still crisp, about 5-7 minutes. Add the snow peas during the last minute of cooking.
  4. 4. Make the Teriyaki Sauce: While the vegetables are cooking, prepare the teriyaki sauce. In a small bowl, whisk together the soy sauce, water, brown sugar, honey, rice vinegar, sesame oil, cornstarch, minced garlic, and ground ginger.
  5. 5. Combine and Simmer: Pour the teriyaki sauce over the vegetables in the skillet. Bring to a simmer, stirring constantly, until the sauce thickens, about 2-3 minutes.
  6. 6. Add the Chicken: Add the cooked chicken back to the skillet and toss to coat with the teriyaki sauce. Heat through, about 1-2 minutes.
