- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (2 sticks) unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon strawberry extract (optional)
- Pink food coloring (optional)
- 1/2 cup strawberry jam
- 1/4 cup powdered sugar
Instructions
- Preheat oven to 375 degrees F (190 degrees C) and line baking sheets with parchment paper.
- Whisk together flour, baking powder, and salt in a medium bowl.
- Cream butter and sugar until light and fluffy.
- Beat in egg, vanilla extract, and strawberry extract (if using). Add pink food coloring if using.
- Gradually add dry ingredients to wet ingredients until just combined.
- Roll dough into small balls (about 1 inch in diameter) and place on baking sheets.
- Bake for 8-10 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
- Prepare the strawberry kiss filling. Combine strawberry jam and powdered sugar in a small bowl. Mix well until smooth.
- Spoon or pipe a small amount of the strawberry kiss filling onto the bottom of half of the cookies.
- Top with the remaining cookies to create a sandwich.
