Ingredients

  • 1 lb raw shrimp (peeled and deveined, tails off)
  • 1 cup jasmine rice (uncooked, rinsed)
  • 2 cups water (or low-sodium chicken broth)
  • 2 whole avocados (diced)
  • 1 cup corn kernels (canned or thawed frozen, drained)
  • 1 cup cherry tomatoes (halved)
  • 0.5 cup red onion (diced)
  • 0.5 cup fresh cilantro (chopped)
  • 1 whole jalapeño (seeded and finely chopped, optional)
  • 2 whole limes (zest and juice divided)
  • 3 tbsp olive oil (divided)
  • 3 cloves garlic (minced)
  • 2 tsp chili powder
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.25 tsp cayenne pepper (adjust to heat preference)
  • 1 tsp kosher salt (plus more to taste)
  • 0.5 tsp black pepper (freshly ground)
  • 0.25 cup plain Greek yogurt (optional, for topping)
  • 2 tsp hot sauce (optional)

Instructions

  1. Cook the rice with 1 cup of rinsed jasmine rice and 2 cups of water or chicken broth. Bring to a boil, then reduce to low and simmer covered for 15 minutes. Let it sit covered for 5 minutes after cooking.
  2. Heat 2 tablespoons of olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds.
  3. Add shrimp, chili powder, smoked paprika, ground cumin, cayenne pepper, salt, and black pepper. Cook for 3-4 minutes until shrimp turn pink and opaque.
  4. In a large bowl, mix diced avocados, corn, cherry tomatoes, red onion, cilantro, and jalapeño. Squeeze juice of 1 lime and toss.
  5. Fluff rice with a fork and spread on serving plates. Top with shrimp and avocado mixture.
  6. Drizzle with remaining olive oil and sprinkle lime zest on top. Serve with Greek yogurt and hot sauce if desired.

Notes

Rinse rice well to remove excess starch. For a different protein option, substitute shrimp with chicken or tofu.
