Description

These Salmon Balls with Creamy Avocado Sauce are a delightful appetizer or light meal, combining the richness of salmon with the freshness of avocado.

Ingredients

Scale
  • For the Salmon Balls:
  • 1 pound fresh salmon, skin removed and finely chopped
  • 1/2 cup panko breadcrumbs
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh dill
  • 1 large egg, lightly beaten
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • Olive oil for cooking
  • For the Creamy Avocado Sauce:
  • 2 ripe avocados
  • 1/4 cup sour cream
  • 2 tablespoons lime juice
  • 1 tablespoon chopped cilantro
  • 1 clove garlic, minced
  • Salt and pepper to taste
  • 2 tablespoons water (or more, to adjust consistency)

Instructions

  1. 1. Prepare the Salmon Balls: In a large bowl, combine the chopped salmon, panko breadcrumbs, red onion, dill, egg, lemon juice, and Dijon mustard. Season with salt and pepper. Mix well until everything is evenly combined.
  2. 2. Form the Balls: Using your hands or a small cookie scoop, form the salmon mixture into bite sized balls about 1 inch in diameter.
  3. 3. Cook the Salmon Balls: Heat a tablespoon of olive oil in a large skillet over medium heat. Once the oil is hot, carefully place the salmon balls into the skillet making sure not to overcrowd. Cook for about 3-4 minutes per side, until golden brown and cooked through. The internal temperature should reach 145°F (63°C). Work in batches if necessary.
  4. 4. Prepare the Avocado Sauce: While the salmon balls are cooking, prepare the avocado sauce. In a food processor or blender, combine the avocados, sour cream, lime juice, cilantro, garlic, salt, and pepper. Blend until smooth and creamy. Add water a tablespoon at a time to reach your desired consistency.
  5. 5. Assemble and Serve: Arrange the cooked salmon balls on a serving platter and drizzle generously with the creamy avocado sauce. Serve immediately.
