Mexican Pizza

Description

A delicious fusion of tacos and pizza, customizable for the whole family.


Ingredients

  • 8 flour tortillas (or corn tortillas)
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1/4 cup water
  • 4 tbsp enchilada sauce
  • 8 ounces refried beans (1/2 can)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or Mexican cheese blend)
  • 1 tomato (roma or beefsteak, seeds removed and diced)
  • 1 small red onion (diced)
  • 1/4 cup black olives
  • 1/4 cup sour cream
  • 2 green onions (finely diced)

Instructions

  1. In a large frying pan or skillet on medium heat, add the ground beef and cook for 5-8 minutes, breaking up the meat as it cooks. Remove excess grease.
  2. Add taco seasoning, water, and enchilada sauce to the meat. Stir and let simmer for 1-2 minutes.
  3. Spread refried beans on one tortilla, top with ground beef, add cheese, and place another tortilla on top.
  4. Spread enchilada sauce on top of the tortilla and cover with shredded cheese. Repeat to assemble all pizzas.
  5. For Air Fryer: Preheat to 400°F and cook each pizza for about 5 minutes until cheese melts and tortillas are crispy.
  6. For Oven: Preheat to 350°F, arrange pizzas on a lined sheet pan, and bake for 8-10 minutes until crispy.
  7. For Pan Frying: Heat oil in a frying pan, cook each pizza for 4-5 minutes with a lid until cheese melts and bottom is crispy.
  8. Transfer to a serving plate, garnish as desired, and serve warm.

Notes

Feel free to customize with your choice of toppings. Store leftovers in an airtight container in the refrigerator for up to 3 days.
