Ingredients

  • 2 cups heavy cream
  • 1 cup whole milk
  • 0.75 cup granulated sugar
  • 2 tablespoons Earl Grey tea, loose-leaf (or 4 tea bags)
  • 1 teaspoon culinary dried lavender (lightly crushed)
  • 5 large egg yolks
  • 0.25 teaspoon fine sea salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon vodka (optional)
  • 2 drops purple gel food coloring (optional)

Instructions

  1. In a medium saucepan, heat the heavy cream, whole milk, and granulated sugar over medium heat, stirring until the sugar dissolves and the mixture is warm, but not boiling.
  2. Add the loose Earl Grey tea and crushed lavender to the warm milk mixture. Remove from heat and let it steep for about 15 minutes.
  3. Strain the mixture through a fine mesh sieve into a bowl to remove the tea leaves and lavender, pressing down on the solids to extract flavor.
  4. In a separate bowl, whisk the egg yolks until pale and fluffy.
  5. Slowly pour the warm milk mixture into the egg yolks while whisking constantly to temper the eggs.
  6. Return the mixture to the saucepan and cook over low heat, stirring constantly until thickened (about 5-7 minutes).
  7. Remove from heat, stir in sea salt, vanilla extract, and vodka (if using). Allow it to cool to room temperature.
  8. Chill the mixture in the refrigerator for at least 4 hours or overnight.
  9. Churn in an ice cream maker according to the manufacturer’s instructions.
  10. If desired, add purple gel food coloring during the last few minutes of churning.
  11. Transfer to an airtight container and freeze for at least 4 hours before serving.

Notes

For best results, use high-quality Earl Grey tea and adjust lavender to your taste. Vodka helps maintain smooth texture but is optional.
