- 1 cup chocolate sandwich cookies (finely chopped; for batter)
- 1.5 cups unsalted butter (softened; for frosting)
- 5 cups powdered sugar (sifted; for frosting)
- 0.5 cup heavy cream (plus more as needed; for frosting)
- 2 tsp vanilla extract (for frosting)
- 0.25 tsp fine salt (for frosting)
- 1.5 cups chocolate sandwich cookie crumbs (for frosting)
- 1 cup chocolate sandwich cookies (coarsely chopped; for filling)
- 10 whole chocolate sandwich cookies (for garnish)
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, mix together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add eggs, milk, vegetable oil, sour cream, and vanilla extract. Mix until smooth.
- Slowly stir in hot coffee and finely chopped chocolate cookies until combined.
- Divide the batter between the prepared cake pans and bake for 30-35 minutes.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat softened butter until creamy. Gradually add powdered sugar, heavy cream, vanilla extract, and salt. Mix until well combined.
- Stir in finely ground chocolate cookie crumbs until smooth.
- To assemble, place one cake layer on a serving plate, spread frosting on top, sprinkle with coarsely chopped cookies, add the second layer, and frost the top and sides.
- Garnish with whole chocolate sandwich cookies on top.
Notes
Serve at room temperature, optionally with cold milk or a scoop of vanilla ice cream. Store leftovers in an airtight container for up to 3 days at room temperature or up to 1 week in the refrigerator.
