- 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 1/4 cup lemon juice (freshly squeezed)
- 2 cloves garlic, minced
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes (optional)
- 1 red bell pepper, cut into 1-inch pieces
- 1 green bell pepper, cut into 1-inch pieces
- 1 red onion, cut into 1-inch pieces
- Wooden or metal skewers
Instructions
- 1. In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, pepper, thyme, and red pepper flakes (if using).
- 2. Add the chicken cubes to the marinade, ensuring they are well coated. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours for the best flavor.
- 3. Preheat your grill to medium heat (about 375°F or 190°C). Thread the marinated chicken onto the skewers, alternating with pieces of red bell pepper, green bell pepper, and red onion.
- 4. Place the skewers on the preheated grill. Cook for about 8-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender. The internal temperature of the chicken should reach 165°F (74°C).
- 5. Remove the skewers from the grill and let them rest for a few minutes before serving.
