- 1.75 cup all-purpose flour
- 0.75 cup graham cracker crumbs
- 0.5 tsp baking powder
- 0.25 tsp baking soda
- 0.5 tsp kosher salt
- 0.5 cup unsalted butter (softened)

- 0.25 cup light brown sugar (packed)
- 1 large egg (room temperature)
- 2 tsp vanilla extract
- 8 oz cream cheese (softened)
- 0.25 cup granulated sugar (for filling)
- 2 tbsp sour cream
- 1 tsp vanilla extract (for filling)
- 0.5 tsp lemon zest (optional)
- 1 tbsp all-purpose flour (for filling)
- 0.25 cup graham cracker crumbs (for topping)
- 0.25 cup strawberry jam (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a bowl, mix together the flour, graham cracker crumbs, baking powder, baking soda, and kosher salt. Set aside.
- In another bowl, beat the softened butter, granulated sugar, and brown sugar until creamy.
- Add the egg and 2 teaspoons of vanilla extract to the butter mixture, and mix well.
- Gradually add the dry ingredients to the wet ingredients, stirring until combined.
- In a separate bowl, mix the softened cream cheese, sugar, sour cream, vanilla extract, lemon zest (if using), and flour until smooth.
- Scoop out cookie dough and flatten it slightly in your hand. Place a spoonful of the cream cheese filling in the center, then fold the dough over to encase the filling, and shape it back into a ball.
- Place the filled cookies on the prepared baking sheet, and sprinkle graham cracker crumbs on top.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Make sure your butter and cream cheese are softened to room temperature. If the dough is too sticky, chill it in the refrigerator for about 30 minutes before baking. Experiment with different jams or citrus zests for flavor variations.
