Description

Flavorful and easy-to-make carne asada tacos perfect for any occasion.

Ingredients

Scale
  • 1.5 lb skirt steak (trimmed)
  • 0.5 cup orange juice (freshly squeezed)
  • 0.25 cup lime juice (freshly squeezed)
  • 0.25 cup soy sauce (low sodium)
  • 0.25 cup olive oil
  • 3 cloves garlic, minced
  • 0.25 cup fresh cilantro, chopped (for marinade)
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon black pepper (freshly ground)
  • 1.5 teaspoons kosher salt (plus more to taste)
  • 1 whole jalapeño, minced (seeded for less heat)
  • 8 whole corn tortillas (warmed)
  • 0.5 cup white onion, finely diced
  • 0.5 cup fresh cilantro, chopped (for serving)
  • 1 whole avocado, sliced (ripe)
  • 0.25 cup cotija cheese, crumbled (optional)
  • 4 wedges lime (for serving)

Instructions

  1. In a bowl, mix the orange juice, lime juice, soy sauce, olive oil, minced garlic, 0.25 cup cilantro, ground cumin, chili powder, black pepper, kosher salt, and minced jalapeño to make the marinade.
  2. Place the skirt steak in a large zip-top bag or dish and pour the marinade over it. Seal or cover and refrigerate for at least 1 hour, or overnight for more flavor.
  3. Preheat your grill to medium-high heat. Remove the steak from the marinade and let it come to room temperature for about 15 minutes.
  4. Grill the steak for about 5-7 minutes per side or until it reaches your desired doneness.
  5. Transfer the steak to a cutting board and let it rest for about 5 minutes before slicing it against the grain into thin strips.
  6. Warm the corn tortillas on the grill for about 30 seconds on each side.
  7. To assemble the tacos, place some sliced steak on a tortilla and top with diced onion, cilantro, avocado slices, and cotija cheese if desired. Serve with lime wedges on the side.

Notes

For the best flavor, let the steak marinate overnight. Don’t skip resting the meat after grilling; it helps keep it juicy.
