- 6 oz cream cheese, softened
- 0.75 cup granulated sugar
- 0.25 cup light brown sugar, packed
- 1 large egg
- 0.5 cup mashed ripe banana (about 1 medium banana)
- 1.5 tsp vanilla extract
- 2.5 cup all-purpose flour
- 2 tsp cornstarch
- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp kosher salt
- 1 cup freeze-dried strawberries, roughly chopped
- 1 cup white chocolate chips (optional but delicious)
- 0.5 tsp lemon zest (optional)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, beat the softened butter, cream cheese, granulated sugar, and brown sugar until smooth and creamy.
- Add the egg, mashed banana, and vanilla extract to the mixture. Mix until well combined.
- In a separate bowl, whisk together the flour, cornstarch, baking powder, baking soda, and kosher salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fold in the freeze-dried strawberries, white chocolate chips (if using), and lemon zest (if using).
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes, or until the edges are golden. The centers may look soft, but they will firm up as they cool.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
For best flavor, use a well-ripened banana. Store cookies in an airtight container for up to one week or freeze for up to three months.
