- 2 lbs boneless, skinless chicken breasts (diced)
- 2 cups sweet potatoes (peeled and cubed)
- 1 can black beans (drained and rinsed)
- 1 can diced tomatoes (with green chilies)
- 1 tablespoon chili powder (adjust to taste)
- 2 teaspoons cumin
- 1 teaspoon garlic powder
- 1 cup chicken broth
Instructions
- Wash and peel the sweet potatoes, then cut them into small cubes.
- Dice the chicken breasts into bite-sized pieces.
- Add the diced chicken, sweet potatoes, black beans, and diced tomatoes to the slow cooker.
- Sprinkle in the chili powder, cumin, and garlic powder.
- Pour the chicken broth over the mixture and combine well.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
Notes
For extra flavor, add chopped onions or bell peppers. This chili is gluten-free and can be made vegetarian by substituting chicken with beans or lentils.
