Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, beat together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing well until everything is combined.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, and kosher salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
- Stir in the rolled oats, chopped apples, and any optional ingredients like walnuts or raisins.
- Use a spoon or cookie scoop to drop dough onto a parchment-lined baking sheet, leaving space between each cookie.
- Bake for about 12-15 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Make sure the butter is softened to room temperature for easier mixing. Use lemon juice on the apples to prevent browning.
