  • 12 ounces fresh or frozen raspberries

  • 1 tablespoon lemon juice
  • 1 tablespoon corn starch

Instructions

  1. 1. Make the Raspberry Filling: In a medium saucepan, combine the raspberries, sugar, and lemon juice. Bring to a simmer over medium heat, stirring occasionally. In a small bowl, whisk together the cornstarch with 1 tablespoon of cold water to form a slurry. Add the slurry to the raspberry mixture and cook, stirring constantly, until the filling thickens, about 2 minutes. Remove from heat and let cool completely.
  2. 2. Prepare the Dough: In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. 3. Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy.
  4. 4. Add Eggs and Vanilla: Beat in the eggs one at a time, then stir in the vanilla extract.
  5. 5. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  6. 6. Chill the Dough: Wrap the dough in plastic wrap and chill in the refrigerator for at least 30 minutes.
