A quick and delicious stir-fry featuring tender chicken, crunchy bell peppers, and rich cashews, perfect for busy weeknights.
Ingredients

- 1 lb Chicken breast, diced
- 0.5 cup Cashews, unsalted (lightly toasted)
- 2 tbsp Soy sauce
- 1 cup Bell peppers, sliced
- 0.5 cup Onion, sliced
- 2 clove Garlic, minced
- 1 tbsp Olive oil
Instructions
- Heat the olive oil in a large skillet over medium heat.
- Add the diced chicken to the skillet. Cook until browned and fully cooked, about 5-7 minutes.
- Add the sliced onions and minced garlic. Stir until the onions are soft.
- Add the sliced bell peppers. Cook for another 3-4 minutes until tender but still crisp.
- Pour in the soy sauce and add the toasted cashews. Stir everything together to combine well.
- Cook for an additional minute, then remove from heat.
Notes
Serve over rice or noodles, or on a bed of steamed vegetables. Garnish with extra cashews or green onions. Leftovers can be stored in an airtight container for up to 3 days in the fridge or frozen for a month.
