  • 2 1/2 cups (300g) all purpose flour, plus more for dusting
  • 1 cup (240ml) warm water
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 4 large eggs
  • 2 tablespoons milk or cream
  • Salt and pepper to taste
  • 1/4 cup chopped fresh chives or green onions, for garnish
  • Optional: Sliced cherry tomatoes, mushrooms, bell peppers

Instructions

  1. 1. Prepare the Dough: In a large bowl, combine the sourdough starter, flour, warm water, olive oil, and salt. Mix until a shaggy dough forms.
  2. 2. Knead the Dough: Turn the dough out onto a lightly floured surface and knead for 8-10 minutes, or until smooth and elastic.
  3. 3. First Rise: Place the dough in a lightly oiled bowl, turning to coat. Cover with plastic wrap and let rise in a warm place for 6-8 hours, or until doubled in size.
  4. 4. Preheat Oven: Preheat your oven to 450°F (232°C). Place a pizza stone or baking sheet in the oven to preheat as well.
  5. 5. Shape the Crust: Gently punch down the dough and turn it out onto a lightly floured surface. Roll or stretch the dough into a 12-inch circle or rectangle.
  6. 6. Assemble the Pizza: Carefully transfer the dough to a piece of parchment paper. Sprinkle evenly with mozzarella and Parmesan cheese. Distribute the crumbled bacon over the cheese.
  7. 7. Prepare the Egg Mixture: In a small bowl, whisk together the eggs, milk or cream, salt, and pepper.
  8. 8. Pour Egg Mixture: Pour the egg mixture evenly over the pizza.
  9. 9. Bake the Pizza: Slide the parchment paper with the pizza onto the preheated pizza stone or baking sheet.
