Why You Will Love This Blueberry Crumble Cheesecake Recipe

blueberry crumble cheesecake slice

This Blueberry Crumble Cheesecake recipe is the baked cheesecake that delivers three completely different and genuinely complementary textures in every single bite simultaneously. The crispy and buttery cookie crust at the base. The dense and silky cream cheese filling in the center. The soft and juicy blueberries studded through the top. And the golden and crunchy brown sugar crumble across the entire surface. No other single dessert format delivers this range of textural and flavor contrast in the same completely effortless and deeply satisfying way.

The water bath baking method is the technique that makes this cheesecake so extraordinarily smooth and so completely crack-free. The humid baking environment created by the surrounding hot water prevents the cheesecake surface from drying and setting too quickly ahead of the interior, which is the mechanism that causes cracks and lopsided tops in cheesecakes baked without a water bath. Our Baklava Pistachio Cheesecake makes a beautifully nutty and equally indulgent companion for a complete and stunning cheesecake celebration spread.

How to Make This Blueberry Crumble Cheesecake Recipe

Preheat the oven to 325°F (160°C) conventional. Prepare a 9-inch springform pan lined with parchment paper at the bottom.

In a food processor, blend the digestive biscuits and granulated sugar together until a fine sand-like texture forms. Add the melted butter and blend until the mixture holds together. Press the cookie crumbs firmly into the bottom and up the sides of the prepared springform pan using the flat bottom of a glass for the most even and compact surface. Bake for 10 minutes. Set aside to cool completely while keeping the oven on.

While the crust bakes, prepare the blueberry topping. In a small bowl, combine the fresh blueberries, granulated sugar, flour, and lemon juice. Toss until no dry flour remains and every blueberry is lightly coated. Set aside.

For the brown sugar crumble, combine the flour and dark brown sugar in a bowl. Pour the melted butter over the flour mixture and use a fork to mix until a crumbled texture forms with no dry flour remaining. Set aside.

For the cheesecake filling, cream the room-temperature cream cheese in a stand mixer or with a hand mixer at low speed for 1 minute. Add the granulated sugar and beat on low for 1 minute. Scrape down the sides and mix for 30 more seconds. In a separate small bowl, mix the sour cream and cornstarch until completely smooth. Add the sour cream mixture and vanilla extract to the cream cheese and mix on low until combined. Add the eggs two at a time on low speed until incorporated, cara mia. Do not overmix. Scrape down the bowl and give a final gentle mix.

Pour the cheesecake filling into the cooled crust. Scatter the blueberry topping evenly over the surface of the filling. Scatter the crumble evenly over the blueberries.

Place the springform pan inside a larger cake pan. Place both in a roasting pan and fill the roasting pan with boiling water from a kettle. This nested water bath method prevents any water from reaching the crust. Alternatively, wrap the springform tightly in three layers of foil before placing in the water bath. Bake for 1 hour and 20 to 30 minutes.

When the baking time is complete, give the pan a very gentle shake. The cheesecake should be just slightly wobbly in the very center. Turn off the oven and leave the door slightly open. Allow the cheesecake to cool in the oven for 1 full hour. Remove from the oven and the water bath and place on a cooling rack. Cool completely to room temperature then refrigerate for at least 6 hours and preferably overnight before slicing.

How to Serve This Blueberry Crumble Cheesecake Recipe

Present this cheesecake whole on a beautiful serving stand after removing the springform ring for the most dramatic and completely gorgeous presentation. The golden crumble scattered across the vivid blueberry topping against the creamy white cheesecake visible at the sides is genuinely one of the most beautiful cheesecake presentations imaginable.

Slice with a long sharp knife dipped in hot water and wiped clean between each cut for the most beautifully defined and cleanly edged slices that show every distinct layer from crust through filling to blueberry and crumble. Our No-Bake Mango Cheesecake makes a beautifully tropical and equally spectacular companion for a complete and wonderful cheesecake collection spread.

How to Store This Blueberry Crumble Cheesecake Recipe

Store covered with plastic wrap or in an airtight container in the refrigerator for up to 5 days. The cheesecake is genuinely at its very best on the second day after overnight refrigeration when the flavors have melded completely and the texture is at its most perfectly set. Do not freeze the assembled cheesecake as the blueberry and crumble topping do not freeze and thaw well.

Tips to Make This Blueberry Crumble Cheesecake Recipe

Blueberry Crumble Cheesecake Creamy

Take the cream cheese, sour cream, and eggs out of the refrigerator 1 to 2 hours before baking and allow to reach genuine room temperature. Cold cream cheese produces lumps in the filling that cannot be mixed out and result in an uneven and less silky finished texture. Room-temperature ingredients blend into the most completely smooth and uniform batter.

Use fresh rather than frozen blueberries for the topping. Fresh blueberries have significantly less water content than frozen and produce a more vibrant and less liquid topping that bakes more evenly without waterlogging the surface of the cheesecake during baking.

Helpful Notes for This Blueberry Crumble Cheesecake Recipe

The water bath is not optional for the best result. Without the water bath the cheesecake is significantly more likely to crack across the surface and may develop a curdled and uneven texture from overbaking. The humid oven environment created by the water bath is what produces the smooth and completely crack-free top that makes this cheesecake so genuinely beautiful.

Full-fat cream cheese is essential for both the flavor and the structural integrity of the filling. Reduced-fat cream cheese contains more water and less fat and produces a softer and less stable cheesecake that does not slice as cleanly and does not have the same rich and deeply satisfying flavor.

Variation of This Blueberry Crumble Cheesecake Recipe

Maria made a version using a combination of fresh blueberries and fresh raspberries for a mixed berry crumble cheesecake that was deeply vibrant in both color and flavor. Teresa tried fresh peaches cut into small pieces in place of the blueberries for a peach crumble cheesecake that was deeply fragrant and completely extraordinary as a summer celebration dessert.

For an autumn version, replace the blueberries with thinly sliced pears tossed with the same sugar flour and lemon juice and add a pinch of ground cinnamon to the crumble mixture for the most warmly fragrant and beautifully seasonal pear crumble cheesecake. Our Rhubarb Cheesecake makes a beautifully tangy and equally spectacular companion for a complete and wonderful fruit-topped cheesecake collection.

FAQs About This Blueberry Crumble Cheesecake Recipe

How do I know when the cheesecake is fully baked?

Give the springform pan a very gentle sideways shake. The filling should show only a very small amount of wobble in the very center of the cheesecake, approximately the size of a small coin. The edges should look completely set and the crumble topping should be golden. If the entire surface wobbles significantly the cheesecake needs more time.

Can I replace the sour cream with Greek yogurt?

Yes. Full-fat Greek yogurt can be substituted for the sour cream in exactly the same quantity. The flavor will be very slightly more tangy and the texture will be essentially identical to the sour cream version.

Why must the cheesecake cool overnight before slicing?

Overnight refrigeration allows the protein and fat structure of the cream cheese filling to fully set and stabilize into the most firm and cleanly sliceable consistency. A cheesecake sliced before adequate chilling will be too soft to produce clean slices and the filling may collapse or smear rather than holding its shape.

Conclusion

This Blueberry Crumble Cheesecake is the most completely extraordinary and deeply beautiful baked cheesecake that makes every occasion feel genuinely celebratory through the most spectacular combination of crispy crust, silky filling, vibrant blueberries, and golden crumble that is completely and utterly impossible to resist in every single extraordinary bite.
