Ingredients

  • 2 medium zucchinis, grated
  • 1 cup corn kernels (fresh or frozen, thawed)
  • 1/2 cup all purpose flour
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh basil
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, for frying

Instructions

  1. Grate the zucchinis and place them in a colander. Sprinkle with salt and let them sit for 10 minutes. Squeeze out excess liquid.
  2. In a bowl, combine zucchini, corn, flour, egg, Parmesan, basil, and garlic. Season with salt and pepper.
  3. Heat olive oil in a skillet over medium heat.
  4. Drop spoonfuls of the mixture into the hot oil, flattening them slightly.
  5. Cook for 3 minutes per side, or until golden brown and crispy.
  6. Remove and drain on paper towels. Serve immediately.
