Instructions

  1. Prepare the Raspberry Puree: In a small saucepan, simmer fresh raspberries over medium heat until softened. Press through a fine mesh sieve to remove seeds. You should have about 1/4 cup of puree.nPlace the chopped white chocolate in a heatproof bowl. In a saucepan, heat the heavy cream until it just begins to simmer. Pour the hot cream over the white chocolate. Let it sit for a minute to soften the chocolate, then whisk until smooth.nStir in the softened butter, raspberry puree, vanilla extract, and salt until well combined. The mixture should be smooth and glossy.nCover the bowl with plastic wrap, pressing it directly onto the surface of the chocolate mixture. This prevents a skin from forming. Chill in the refrigerator for at least 2 hours, or preferably overnight, until firm enough to scoop.nUse a small cookie scoop or spoon to scoop out rounded portions of the chilled chocolate mixture. Roll each portion between your palms to form a smooth ball. Place the truffles on a parchment lined baking sheet.nReturn the shaped truffles to the refrigerator for another 30 minutes to firm up. This will make them easier to coat.nIf you’re coating the truffles, melt the remaining white chocolate using a double boiler or microwave.nDip each truffle into the melted white chocolate, using a fork or dipping tools to coat evenly. Place them back on the parchment lined baking sheet.nImmediately sprinkle the coated truffles with crushed freeze dried raspberries.nRefrigerate the finished truffles for at least 15 minutes to allow the coating to set completely.
