- 12 ounces high-quality white chocolate, chopped
- 1/2 cup heavy cream
- 1/4 cup unsalted butter, softened
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 cup fresh raspberries
- 1 tablespoon granulated sugar
- 1 teaspoon lemon juice
- 4 ounces white chocolate, for dipping (optional)
- Freeze-dried raspberries, crushed, for garnish (optional)
Instructions
- 1. Make the Raspberry Puree: In a small saucepan, combine the fresh raspberries, sugar, and lemon juice over medium heat, until raspberries break down (5-7 minutes). Strain, cool.
- 2. Prepare Truffle Base: Place chopped white chocolate in a heatproof bowl. Heat heavy cream until simmering. Pour over chocolate; let sit 1 minute.
- 3. Melt and Combine: Stir chocolate and cream until smooth. Add butter, salt, vanilla. Stir until glossy.
- 4. Swirl in Raspberry Puree: Gently swirl in about half the raspberry puree. Don’t overmix. Reserve remaining puree for drizzling.
- 5. Chill: Cover with plastic wrap, pressing onto surface. Refrigerate 2+ hours, firm.
- 6. Shape Truffles: Scoop and roll into balls. Chill 30 minutes if too soft.
- 7. Melt Coating Chocolate (Optional): Melt remaining white chocolate in double boiler/microwave.
- 8. Coat and Garnish (Optional): Dip truffles, let excess drip. Place on parchment. Sprinkle with crushed freeze-dried raspberries. Drizzle with reserved puree.
- 9. Chill Again: Refrigerate 15-20 min, until coating sets.
- 10. Serve Chilled.
