Why You Will Love This White Chocolate Raspberry Cake Recipe

This White Chocolate Raspberry Cake recipe is the celebration layer cake that produces the most genuinely extraordinary and deeply memorable result because every single component has been developed to be the most complete and most delicious version of itself rather than a shortcut or simplified version. The fresh raspberry puree cooked from scratch until thick and concentrated. The vanilla milk poured warm over the just-baked layers. The Swiss meringue buttercream folded with real melted white chocolate.
The vanilla milk poured over the warm cake layers is the technique step that makes this cake so completely extraordinary in its moisture and flavor compared to any vanilla layer cake that does not use this step. How to Make This White Chocolate Raspberry Cake Recipe
Begin by making the raspberry puree first so it has sufficient time to cool and thicken completely. Add the fresh raspberries to a food processor and process until completely smooth. Push the puree through a fine mesh sieve to remove all seeds. Add the strained puree to a saucepan along with the sugar, fresh lemon juice, and cornstarch mixed with water. Place over medium heat and cook, stirring constantly, until the mixture thickens to the most beautiful and concentrated jam-like consistency. Refrigerate until completely cold.
Preheat the oven to 180°C (350°F). Grease and line three 8-inch cake tins.
In a large bowl, beat the softened butter, vegetable oil, granulated sugar, and vanilla extract together for 5 full minutes until genuinely light and fluffy. Add 3 of the eggs and mix until incorporated, then add the remaining 3 eggs and mix until combined. Add the flour and whole milk and mix until just a smooth and beautiful batter forms. Divide evenly between the three prepared cake tins and bake for 40 to 45 minutes until a toothpick inserted into the center comes out completely clean.
While the cakes are still warm in their tins, heat the whole milk and vanilla extract together until just warm but not hot. Pour the warm vanilla milk evenly over each warm cake layer, allowing it to soak completely through the crumb, cara mia. Set aside to cool completely in the tins.
Prepare the Swiss meringue buttercream per the separate Swiss meringue recipe. Fold the melted white chocolate through the finished buttercream until completely incorporated and the most beautifully ivory-colored and deeply white chocolate-flavored buttercream results.
Once the cake layers are completely cooled, remove from the tins and level the tops if desired. Place the first layer on a cake board. Spread a thin layer of raspberry puree over the surface, then spread a generous layer of white chocolate buttercream over the puree. Repeat with the second layer. Place the third layer on top. Refrigerate for 20 minutes until the assembled cake is sufficiently set and stable for the final decoration.
For the exterior, mix any remaining raspberry puree into the white chocolate buttercream for the most beautifully pink and deeply fruity finishing frosting. Cover the outside of the cake completely, pipe swirls around the top edge, and finish with fresh raspberries for the most completely stunning and beautifully elegant celebration cake presentation.
How to Serve This White Chocolate Raspberry Cake Recipe

The blush pink exterior frosting and the crown of fresh raspberries creates one of the most genuinely beautiful and professionally elegant celebration cake presentations imaginable.
Slice with a long sharp knife wiped clean between cuts for the most beautifully defined cross-section revealing the vanilla cake layers, the vibrant raspberry puree line, and the ivory white chocolate buttercream in every gorgeous slice. Our Limoncello Mascarpone Cake makes a beautifully Italian and equally celebration-worthy companion for a complete and wonderful special occasion cake collection.
How to Store This White Chocolate Raspberry Cake Recipe
Store covered in the refrigerator for up to 4 days. Allow slices to come to room temperature for 20 to 30 minutes before serving for the most pleasant and completely soft buttercream texture. The individual cake layers can be baked and stored at room temperature wrapped in plastic for up to 2 days before assembly. The raspberry puree stores refrigerated in an airtight container for up to 1 week.
Tips to Make This White Chocolate Raspberry Cake Recipe

Make the raspberry puree first and refrigerate for several hours or overnight before assembling the cake. A completely cold and thickened puree spreads most cleanly and most evenly between the cake layers without sliding or running into the white chocolate buttercream. Warm or thin puree produces a less defined and less beautiful layer within the assembled cake.
Pour the vanilla milk over the cake layers while they are still warm from the oven. Warm cake absorbs liquid most readily and most evenly through the open crumb structure. Cold or completely cooled cake absorbs liquid much more slowly and much less completely, producing an uneven soak rather than the most beautifully uniform vanilla milk-infused moisture throughout every layer.
Helpful Notes for This White Chocolate Raspberry Cake Recipe
Use the highest quality white chocolate available for the most beautifully rich and deeply complex white chocolate flavor in the buttercream. White chocolate with at least 30% cocoa butter produces the most silky and most genuinely white chocolate-flavored buttercream. Lower-quality white chocolate products containing vegetable fats rather than cocoa butter produce a flat and less satisfying flavor.
If store-bought raspberry jam is being substituted for the homemade raspberry puree as a time-saving shortcut, choose the highest quality seedless raspberry jam available for the most concentrated and genuinely vibrant raspberry flavor between the layers.
Variation of This White Chocolate Raspberry Cake Recipe
Maria made a version using fresh strawberries rather than raspberries for the puree for a white chocolate strawberry cake that was equally vibrant and beautifully pink with a sweeter and more mellow fruit flavor that was completely extraordinary at a summer birthday celebration. Teresa tried adding a teaspoon of freeze-dried raspberry powder to the white chocolate buttercream alongside the melted white chocolate for the most deeply raspberry-flavored and most beautifully pink white chocolate raspberry buttercream that was completely extraordinary.
For a lemon white chocolate version, add the zest of two lemons to the vanilla cake batter alongside the vanilla extract for the most fragrant and bright lemon vanilla layers that complement the raspberry puree and white chocolate buttercream in the most completely extraordinary and beautifully balanced celebration cake. Our Pistachio Rose Milk Cake makes a beautifully floral and equally elegantly layered companion for a complete and wonderful special occasion cake collection.
FAQs About This White Chocolate Raspberry Cake Recipe
Why is warm vanilla milk poured over the cake layers?
Pouring warm vanilla-infused milk over the cake layers while still hot from the oven and in their tins allows the warm and open crumb structure to absorb the liquid most completely and most evenly throughout every layer. This technique adds both extra moisture and an additional layer of vanilla flavor that makes the finished cake extraordinarily moist and deeply fragrant in a way that no amount of extra butter or oil in the batter alone can achieve.
Can I use plain all-purpose flour instead of self-raising flour?
Yes. Use the same quantity of all-purpose flour and add 3½ teaspoons of baking powder and ⅛ teaspoon of salt to the measured flour before using. Mix the raising agents and salt through the flour thoroughly before adding to the batter for the most even distribution and the most consistently beautiful rise.
What if I cannot find Swiss meringue buttercream ingredients?
A standard American buttercream of softened butter and powdered sugar beaten until fluffy can be substituted for the Swiss meringue buttercream. Fold the melted white chocolate through the finished American buttercream in the same quantity. The result will be slightly sweeter and less silky than the Swiss meringue version but equally beautiful and deeply delicious.
Conclusion
This White Chocolate Raspberry Cake is the most completely spectacular and deeply beautiful celebration layer cake that makes every birthday and every anniversary and every special occasion feel genuinely and completely extraordinary through the most harmonious and deeply delicious combination of vanilla-milk-soaked cake layers, vibrant fresh raspberry puree, and the most silky white chocolate buttercream in every single beautifully stacked and completely irresistible slice. We hope it brings the same deeply joyful celebration and the same completely delighted gathering to your kitchen that it has always brought to ours.
