Description

A silky smooth White Chocolate Mousse Tart with a buttery spiced pastry crust and a cloud-like white chocolate mousse filling. Elegant, impressive, and surprisingly simple to make ahead for any special occasion.


Ingredients

1 cup All-Purpose Flour

1/4 cup Powdered Sugar

1/4 tsp Ground Cinnamon

1/8 tsp Ground Nutmeg

1/4 tsp Salt

1/2 cup Cold Unsalted Butter, cubed

1 large Egg Yolk

2 to 4 tbsp Cold Water

8 oz High-Quality White Chocolate, chopped

1 cup Heavy Cream, well chilled

1 tsp Pure Vanilla Extract

1 tsp Unflavored Gelatin optional

Fresh Berries for garnish

White Chocolate Curls for garnish

Powdered Sugar for dusting


Instructions

1. Whisk together flour, powdered sugar, cinnamon, nutmeg, and salt.

2. Cut in cold butter until mixture resembles coarse crumbs.

3. Add egg yolk and cold water one tablespoon at a time until dough just comes together.

4. Wrap in plastic and refrigerate 30 minutes.

5. Preheat oven to 350°F. Roll dough to fit tart pan and press in evenly.

6. Pierce base with a fork and bake 15 to 20 minutes until lightly golden. Cool completely.

7. Melt white chocolate over simmering water or in microwave in 15-second bursts. Cool to room temperature.

8. If using gelatin, dissolve in warm milk and cool slightly.

9. Whip chilled heavy cream to soft peaks in a chilled bowl.

10. Fold cooled white chocolate and vanilla gently into whipped cream.

11. Fold in gelatin mixture if using.

12. Pour mousse into cooled crust and smooth the top.

13. Refrigerate at least 2 hours until fully set.

14. Garnish with fresh berries, white chocolate curls, and powdered sugar before serving.

Notes

Use high-quality white chocolate with cocoa butter listed as a primary ingredient.

Chill mixing bowl and beaters before whipping cream for best results.

Allow melted chocolate to cool fully before folding into cream.

Gelatin is optional but gives cleaner slices for dinner party presentation.

Tart can be assembled the night before and refrigerated overnight.
