- 1 cup red lentils (masoor dal), rinsed
- 4 cups vegetable broth
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons tomato paste
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (13.5 ounce) can coconut milk, full fat
- 2 teaspoons cumin powder
- 1 teaspoon turmeric powder
- 1 teaspoon coriander powder
- ½ teaspoon garam masala
- ¼ teaspoon cayenne pepper (optional, for heat)
- 2 tablespoons olive oil
- Salt to taste
- Fresh cilantro, chopped, for garnish
- 1 tablespoon lemon juice, fresh
Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened, about 5 minutes. Add minced garlic and grated ginger; cook for another minute until fragrant.
- Stir in cumin powder, turmeric powder, coriander powder, garam masala, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly, until fragrant. Add tomato paste and cook for another minute.
- Add rinsed red lentils, diced tomatoes (with their juice), and vegetable broth to the pot. Stir well to combine.
- Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the lentils are tender and have thickened. Stir occasionally to prevent sticking.
- Stir in coconut milk and simmer for another 5 minutes, allowing the flavors to meld together. Season with salt to taste.
- Remove from heat. Stir in fresh lemon juice. Garnish with chopped fresh cilantro before serving.
