- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 carrots, peeled and chopped
- 2 celery stalks, chopped
- 4 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 teaspoon red pepper flakes (optional)
- 1 (28 ounce) can crushed tomatoes
- 4 cups vegetable broth
- 2 (15 ounce) cans butter beans, drained and rinsed
- 1 cup chopped fresh parsley
- Salt and black pepper to taste
- Juice of 1/2 lemon
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery and cook until softened, about 5-7 minutes.
- Add the garlic, thyme, rosemary, and red pepper flakes (if using) and cook for 1 minute more, until fragrant.
- Pour in the crushed tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes, allowing the flavors to meld.
- Stir in the butter beans and parsley. Simmer for another 10 minutes, or until the beans are heated through and the stew has thickened slightly.
- Stir in the lemon juice and season with salt and pepper to taste.
- Ladle into bowls and serve hot.
