Description

The most creamy and luxurious Tuscan Chicken made in one pan with golden seared butterflied chicken breasts finished in a rich sauce of sun-dried tomatoes, baby spinach, heavy cream, and Parmesan. A deeply flavorful and impressive dinner ready in under 45 minutes.


Ingredients

2 large Boneless Skinless Chicken Breasts butterflied into 4 pieces

1 1/2 tsp Kosher Salt divided

1/2 tsp Freshly Ground Black Pepper

2 to 3 tbsp Olive Oil divided

1 small Yellow Onion diced

3 cloves Garlic minced

1/2 cup Oil-Packed Sun-Dried Tomatoes drained and thinly sliced

2 tsp Dried Italian Seasoning

5 oz Baby Spinach about 5 packed cups

1 1/4 cups Heavy Cream

1 oz Parmesan Cheese freshly grated about 1/2 cup


Instructions

1. Butterfly each chicken breast in half horizontally to yield 4 thinner pieces. Pat dry and season with 1 tsp salt and black pepper.

2. Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering.

3. Sear chicken in two batches 3 to 5 minutes per side until deeply golden. Transfer to a plate. Chicken will not be cooked through.

4. Reduce heat to medium. Add remaining oil if needed. Add diced onion and cook 2 to 3 minutes until softened.

5. Add minced garlic, sun-dried tomatoes, and Italian seasoning. Cook 30 to 60 seconds until fragrant.

6. Add baby spinach a handful at a time stirring after each addition until just wilted.

7. Add heavy cream, Parmesan, and remaining 1/2 tsp salt. Stir to combine and bring to a gentle simmer.

8. Scrape up any browned bits from the pan bottom with a wooden spoon.

9. Return chicken and accumulated juices to the skillet. Spoon sauce over the top.

10. Simmer gently 4 to 7 minutes until chicken reaches 165°F. Serve immediately over pasta or rice.

Notes

Always sear chicken in two batches to maintain oil temperature and develop a proper golden crust.

Use oil-packed sun-dried tomatoes not dry-packed for the best texture and flavor in the sauce.

Freshly grated Parmesan melts more smoothly into the sauce than pre-grated.

Do not boil the cream sauce vigorously as this can cause it to break and become greasy.

Store refrigerated in an airtight container for up to 4 days.
