- For the Sponge Layer:
- 1 cup all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon pure vanilla extract
- For the Lemon Pudding Layer:
- 1 1/2 cups granulated sugar
- 1/4 cup all purpose flour
- 1/4 teaspoon salt
- 2 cups boiling water
- 1/2 cup fresh lemon juice (about 3–4 lemons)
- 2 tablespoons unsalted butter
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a large bowl, cream together the softened butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Pour the batter into the prepared baking dish and spread evenly.
- In a separate bowl, whisk together the sugar, flour, and salt for the pudding layer.
- Gradually whisk in the boiling water until smooth. Stir in the lemon juice and butter.
- Carefully pour the lemon mixture over the batter in the baking dish. Do not stir.
- Bake for 40-45 minutes, or until the top is golden brown and the pudding is set. The pudding layer will be saucy underneath the sponge.
- Let it cool slightly before serving.
