Tortellini Carbonara The Most Creamy and Indulgent Pasta You Will Ever Make

Description

The most creamy and indulgent Tortellini Carbonara made with cheese-stuffed tortellini tossed in a silky egg and Parmesan sauce with crispy pancetta and generous freshly ground black pepper. A completely authentic no-cream carbonara twist ready in 30 minutes.


Ingredients

18 oz Cheese-Stuffed Tortellini fresh or refrigerated preferred

2 large Eggs room temperature

1 cup Parmesan Cheese finely grated plus extra for serving

6 oz Pancetta or Bacon diced

2 cloves Garlic minced optional

Freshly Ground Black Pepper to taste

Salt to taste

2 tbsp Fresh Parsley chopped for garnish optional

Reserved Pasta Water as needed


Instructions

1. Bring a large pot of generously salted water to a boil.

2. Whisk eggs and finely grated Parmesan together in a bowl until smooth and thick. Set aside within reach.

3. Cook diced pancetta or bacon in a large skillet over medium heat 5 to 7 minutes until crispy and fat rendered.

4. Add garlic if using for the final 30 seconds. Remove skillet from heat entirely.

5. Cook tortellini in boiling water according to package directions until al dente.

6. Reserve at least 1/4 cup pasta cooking water before draining.

7. Drain tortellini and immediately add to the off-heat skillet with pancetta.

8. Pour egg and Parmesan mixture over hot tortellini and stir vigorously and continuously.

9. Add reserved pasta water one tablespoon at a time until sauce is silky and coats every piece.

10. Season generously with freshly ground black pepper. Taste and add salt only if needed.

11. Serve immediately in warm bowls with extra Parmesan and parsley.

Notes

Always remove the skillet completely from heat before adding the egg mixture.

Use room temperature eggs for the smoothest most reliable sauce.

Freshly grated Parmesan from a block produces a significantly smoother sauce than pre-grated.

Black pepper is an essential flavor component in carbonara not just a garnish.

Freezing is not recommended. Store refrigerated up to 3 days. Reheat gently with a splash of milk.
