- 2 tablespoons coconut oil
- 2 cloves garlic, minced
- 1 inch ginger, peeled and grated
- 1 red chili, finely chopped (optional)
- 8 ounces mushrooms, sliced (shiitake, oyster, or button)
- 4 cups vegetable broth
- 1 can (13.5 oz) full fat coconut milk
- 2 tablespoons soy sauce (or tamari for gluten free)
- 1 tablespoon lime juice
- 1 teaspoon brown sugar (or maple syrup)
- 1 stalk lemongrass, bruised
- 4 kaffir lime leaves (optional)
- Fresh cilantro, chopped (optional)
- Lime wedges (optional)
- Red pepper flakes (optional)
Instructions
- Heat coconut oil in a large pot over medium heat. Add garlic, ginger, and chili (if using). Cook until fragrant, about 1 minute.
- Add mushrooms and cook for 5-7 minutes, until softened.
- Pour in vegetable broth and coconut milk. Add soy sauce, lime juice, and brown sugar. Stir well.
- Add lemongrass and kaffir lime leaves (if using).
- Bring to a simmer, then reduce heat, cover, and simmer for 15-20 minutes.
- Remove lemongrass and kaffir lime leaves before serving. Adjust seasoning to taste.
- Garnish with cilantro, lime wedges, and red pepper flakes, if desired.
