Smooth and creamy pistachio panna cotta topped with honey and chopped pistachios, perfect for any special occasion.
Ingredients

- 2 cups heavy cream
- 1 cup whole milk
- 0.5 cup granulated sugar
- 0.75 cup unsalted pistachios, shelled and finely ground (lightly toasted)
- 2.5 teaspoons unflavored powdered gelatin
- 3 tablespoons cold water (for blooming gelatin)
- 1 teaspoon vanilla extract
- 0.13 teaspoon fine sea salt
- 0.25 cup chopped pistachios (for garnish)
- 2 tablespoons honey (for drizzling)
- 0.5 cup fresh raspberries (optional garnish)
Instructions
- In a small bowl, sprinkle the gelatin over the cold water and let it sit for about 5 minutes to bloom.
- In a saucepan, combine the heavy cream, whole milk, sugar, ground pistachios, and salt. Heat over medium heat until warm but not boiling.
- Remove from heat and stir in the bloomed gelatin until completely dissolved.
- Add vanilla extract and stir well.
- Pour the mixture into serving glasses or molds and let sit at room temperature for about 30 minutes.
- Cover with plastic wrap and refrigerate for at least 4 hours or until set.
- Once set, gently unmold the panna cotta if using molds; if in glasses, serve directly.
Notes
To enhance flavor, toast pistachios before grinding. Ensure gelatin is fully dissolved to prevent lumps.
