- 1.5 cups cottage cheese (small curd, drained)
- 2 large eggs
- 0.25 cup granulated sugar
- 1 teaspoon vanilla extract
- 0.25 cup unsalted butter, melted (slightly cooled)
- 1.25 cups all-purpose flour
- 2 teaspoons baking powder
- 0.25 teaspoon baking soda
- 0.25 teaspoon fine sea salt
- 0.75 cup fresh blueberries (optional, tossed with 1 teaspoon flour)
- 1 teaspoon lemon zest (optional)
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease it lightly with butter.
- In a large bowl, mix the cottage cheese, eggs, sugar, vanilla extract, and melted butter until well combined.
- In another bowl, whisk together the flour, baking powder, baking soda, and sea salt.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined and being careful not to overmix.
- If using, fold in the blueberries and lemon zest.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
Drain the cottage cheese well to avoid wet muffins. Experiment with add-ins like chocolate chips or nuts for different flavors.
