A simple and delicious Sweet Potato Brussel Sprout Hash recipe perfect for a healthy breakfast, brunch, or side dish.

- 2 medium sweet potatoes, peeled and diced
- 1 pound brussel sprouts, trimmed and quartered
- 2 tablespoons olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- Optional: Red pepper flakes for a little heat
- Optional: Chopped fresh parsley, for garnish
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute until fragrant.
- Add the diced sweet potatoes and quartered brussel sprouts to the skillet. Stir well to combine with the onion and garlic.
- Sprinkle the smoked paprika, dried thyme, salt, and pepper over the vegetables. Stir to evenly coat. Cook, stirring occasionally, for about 1520 minutes, or until the sweet potatoes are tender and the brussel sprouts are slightly browned.
- Taste the hash and adjust the seasoning as needed. Add more salt, pepper, or smoked paprika to your liking. If you like a little heat, sprinkle in some red pepper flakes.
- Remove from heat and garnish with chopped fresh parsley, if desired. Serve immediately.
