- 1 lb elbow macaroni
- 6 tablespoons butter
- 1/2 cup all-purpose flour
- 3 cups milk
- 4 cups shredded cheddar cheese
- 1 cup shredded Gruyere cheese (optional, for extra flavor)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Pinch of nutmeg (optional)
Instructions
- 1. Cook the Macaroni: Cook the macaroni according to package directions until al dente. Drain and set aside.
- 2. Prepare the Cheese Sauce: In a large saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1-2 minutes to create a roux. Gradually whisk in the milk, making sure to smooth out any lumps. Continue whisking until the sauce thickens, about 5-7 minutes.
- 3. Add the Cheese: Remove the saucepan from the heat and stir in the cheddar cheese and Gruyere cheese (if using) until melted and smooth. Season with salt, pepper, and nutmeg (if using).
- 4. Combine Macaroni and Cheese Sauce: Add the cooked macaroni to the cheese sauce and stir to coat evenly. Set aside and keep warm.
- 5. Cook the Chicken: While the macaroni is cooking, heat the olive oil in a large skillet or wok over medium high heat. Add the chicken pieces and cook until browned and cooked through, about 6-8 minutes.
- 6. Make the Sauce: Add the minced garlic to the skillet and cook for another minute until fragrant. In a small bowl, whisk together the honey, soy sauce, rice vinegar, sriracha, black pepper, and red pepper flakes (if using). Pour the sauce over the chicken.
- 7. Thicken the Sauce: Bring the sauce to a simmer and add the cornstarch slurry. Stir constantly until the sauce thickens to your desired consistency, about 1-2 minutes.
- 8. Combine and Serve: Serve the Sweet and Spicy Honey Pepper Chicken over a generous portion of macaroni and cheese. Garnish with chopped green onions and sesame seeds.
