A hearty and satisfying dish combining sweet potatoes with black beans, corn, and cheese, enriched with vitamins and fiber for a healthy weeknight dinner.

- 4 whole sweet potatoes (medium; scrubbed)
- 2 tbsp olive oil
- 15 oz canned black beans (drained and rinsed)
- 1 cup corn kernels (frozen or canned; if canned, drained)
- 1 cup red bell pepper (diced)
- 0.5 cup red onion (diced)
- 2 cloves garlic (minced)
- 1 tsp chili powder
- 1 tsp ground cumin
- 0.5 tsp smoked paprika
- 0.75 tsp kosher salt (plus more to taste)
- 0.25 tsp black pepper
- 0.75 cup shredded cheddar cheese
- 0.25 cup fresh cilantro (chopped, divided)
- 1 whole lime (juice half for filling; serve remaining wedges)
- 0.5 cup plain Greek yogurt (for serving; optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Pierce each sweet potato several times with a fork. Rub with olive oil and sprinkle with salt.
- Place the sweet potatoes on a baking sheet and bake for about 45-60 minutes, or until tender.
- While the potatoes bake, heat a pan over medium heat. Add olive oil, then diced red onion and red bell pepper. Sauté until soft.
- Add minced garlic, black beans, corn, chili powder, cumin, paprika, salt, and pepper to the pan. Cook until heated through, about 5-7 minutes.
- Take the cooked sweet potatoes out of the oven. Let cool for a few minutes.
- Cut each sweet potato in half lengthwise. Scoop out some flesh to make room for the filling.
- Mix the scooped sweet potato flesh with the bean mixture, lime juice, and half of the chopped cilantro.
- Spoon the mixture back into the sweet potato halves. Top with shredded cheddar cheese.
- Return the stuffed sweet potatoes to the oven for another 10-15 minutes, until the cheese is melted.
- Serve topped with fresh cilantro, lime wedges, and Greek yogurt if desired.
Notes
Choose firm sweet potatoes without blemishes for the best texture. Feel free to switch up toppings; consider avocado or different cheese types.
