Instructions
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, and sugar.
- In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Gently fold in the diced strawberries.
- Preheat your waffle iron according to the manufacturer’s instructions.
- Lightly grease the waffle iron with cooking spray or butter.
- Pour the batter onto the hot waffle iron, using the amount recommended by the waffle iron manufacturer.
- Cook the waffles until golden brown and crisp, usually 3 to 5 minutes.
- While the waffles are cooking, prepare the strawberry topping (if using). In a medium bowl, combine the sliced strawberries, sugar, and lemon juice. Stir gently and let sit for at least 10 minutes to allow the juices to release.
