Description

Ingredients

  • 0.75 cup small pearl tapioca (sago) (dry)
  • 6 cup water (for boiling; will be drained)
  • 3 cup whole milk
  • 1 cup coconut milk (optional; for richer flavor)
  • 0.25 cup granulated sugar (adjust to taste)
  • 0.25 cup sweetened condensed milk (optional; adds creaminess)
  • 1 teaspoon vanilla extract
  • 0.25 teaspoon fine salt
  • 2 cup fresh strawberries (hulled and diced)
  • 1 teaspoon lemon juice (brightens the strawberries)
  • 1 tablespoon fresh mint (chopped; optional garnish)

Instructions

  1. Rinse the tapioca pearls in cold water. Bring 6 cups of water to a boil in a large pot. Add the tapioca pearls and cook according to package instructions, about 15-20 minutes, until transparent, stirring occasionally.
  2. Drain the tapioca and rinse it under cold water to stop the cooking process and remove excess starch.
  3. In a separate pot, heat whole milk and coconut milk (if using) over medium heat. Stir in granulated sugar, sweetened condensed milk (if using), vanilla extract, and fine salt. Bring to a gentle simmer.
  4. Add the drained tapioca to the milk mixture, stir to combine, and simmer for another 5-10 minutes.
  5. In a bowl, mix diced strawberries with lemon juice.
  6. Once the tapioca mixture has cooled, layer it with the strawberries in serving dishes.

Notes

Chill the dessert for at least an hour for the best texture. Adjust sweetness based on your preference. Store leftovers in an airtight container for 2-3 days.
