2 1/2 cups All-Purpose Flour

2 tsp Baking Powder

1/2 tsp Salt

1 cup Unsalted Butter softened

1 3/4 cups Granulated Sugar

4 large Eggs room temperature

2 tsp Pure Vanilla Extract

3/4 cup Sour Cream room temperature

2 cups Fresh Strawberries hulled and sliced for filling

2 tbsp Granulated Sugar for macerating

1 tbsp Fresh Lemon Juice for macerating

1 cup Unsalted Butter room temperature for frosting

2 cups Marshmallow Fluff or Cream

3 to 4 cups Powdered Sugar sifted

1 to 2 tbsp Heavy Cream

1 tsp Pure Vanilla Extract for frosting

Pinch of Salt


Instructions

1. Toss sliced strawberries with sugar and lemon juice. Macerate 30 minutes. Drain excess syrup before using.

2. Preheat oven to 350°F 175°C. Grease and line two 9-inch pans.

3. Whisk flour, baking powder, and salt. Beat softened butter and sugar 2 to 3 minutes light and fluffy. Add eggs one at a time. Add vanilla.

4. Alternate flour with sour cream beginning and ending with flour. Mix just combined.

5. Divide between pans. Bake 28 to 32 minutes until toothpick clean. Cool completely.

6. Beat butter 3 minutes pale and fluffy. Add marshmallow fluff. Beat smooth.

7. Gradually add powdered sugar, cream, vanilla, and salt. Beat 3 minutes incredibly fluffy.

8. Assemble with marshmallow frosting between layers and generous drained strawberry filling.

9. Frost entire exterior with marshmallow frosting.

10. Optionally torch exterior with kitchen torch for dramatic golden toasted effect.
