A stunning Strawberry Earthquake Cake with a creamy cream cheese swirl, fresh strawberries, and white chocolate chips baked into every irresistible slice. Easy, beautiful, and impossible to resist.
Ingredients
1 box Strawberry Cake Mix
1 1/2 cups Fresh or Frozen Strawberries, diced and drained
1 cup White Chocolate Chips or Chunks
1 cup Sweetened Shredded Coconut
1/2 cup Chopped Pecans or Walnuts
8 oz Cream Cheese, softened
1/2 cup Unsalted Butter
2 1/2 cups Powdered Sugar
1 tsp Vanilla Extract
Instructions
1. Preheat oven to 350°F and grease a 9×13 inch baking dish.
2. Mix strawberry cake mix with water, oil, and eggs until smooth, about 2 minutes.
3. Pour half the batter into the prepared dish and spread evenly.
4. Beat cream cheese until smooth. Add powdered sugar, milk, and vanilla and beat until fluffy.
5. Spoon cream cheese mixture over batter and swirl gently with a knife.
6. Scatter diced strawberries over the cream cheese layer.
7. Drizzle remaining batter over the top.
8. Bake 45 to 50 minutes until toothpick comes out clean.
9. Cool in pan 10 minutes.
10. Toast nuts in a dry skillet until golden and sprinkle over cake before serving.
Notes
Always use fully softened cream cheese to avoid lumps.
Drain frozen strawberries well before using.
Do not overmix the batter.
Layer strawberries over the cream cheese, not underneath.
