Description

A rich and visually striking black velvet cake, perfect for Halloween celebrations, topped with creamy frosting and blackberry compote.


Ingredients

  • 2 cups All-purpose flour (sifted)
  • 3/4 cup Black cocoa powder (sifted)
  • 2 tsp Baking soda
  • 1 tsp Baking powder
  • 1 tsp Salt
  • 2 Eggs (room temperature)
  • 1 cup Buttermilk (room temperature)
  • 1 cup Coffee (hot)
  • 1/2 cup Canola oil
  • 2 tsp Vanilla extract
  • 2 cups Fresh blackberries
  • 2 tbsp White granulated sugar
  • 1 tbsp Fresh lemon juice
  • 1 tsp Lemon zest
  • 1 Cinnamon stick
  • 1/4 cup Water
  • 1 tbsp Cornstarch
  • 8 oz Cream cheese (softened)
  • 1/2 cup Unsalted butter (softened)
  • 3 cups Powdered sugar (sifted)
  • 1 cup Black cocoa powder (sifted)
  • 1/4 tsp Salt
  • 1 tsp Vanilla extract
  • Chocolate skulls (for decoration)
  • Fresh blackberries (for topping)
  • Dried rose petals (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix the sugar, flour, black cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk together the eggs, buttermilk, hot coffee, canola oil, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients and mix until smooth.
  5. Pour the batter into prepared cake pans and bake for 30-35 minutes. Let the cakes cool completely.
  6. In a pot, add fresh blackberries, sugar, lemon juice, lemon zest, cinnamon stick, and water. Cook over medium heat for about 10-15 minutes, stirring occasionally until the blackberries break down.
  7. Dissolve cornstarch in a bit of water and add it to the pot to thicken the mixture. Remove from heat and allow to cool.
  8. In a mixing bowl, beat the softened cream cheese and butter until creamy.
  9. Gradually add the powdered sugar, black cocoa powder, salt, and vanilla extract, beating until fluffy and smooth.
  10. Once the cakes are cool, place one layer on a serving plate. Spread a layer of blackberry compote, then add some frosting.
  11. Top with the second layer of cake, and frost the top and sides with the black cocoa frosting.
  12. Decorate with chocolate skulls, fresh blackberries, and dried rose petals.

Notes

Ensure all ingredients are at room temperature for a smoother batter. You can adjust the sweetness of the blackberry compote to taste.
