  • 4 boneless, skinless chicken breasts
  • 10 ounces frozen spinach, thawed and squeezed dry
  • 1 (14 ounce) can artichoke hearts, drained and chopped
  • 4 ounces cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika (optional, for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
  2. Place each chicken breast between two sheets of plastic wrap. Using a meat mallet or rolling pin, pound the chicken to an even 1/2 inch thickness.
  3. In a medium bowl, combine the softened cream cheese, mayonnaise, chopped artichoke hearts, well drained spinach, grated Parmesan cheese, half of the mozzarella cheese, minced garlic, salt, and pepper. Mix until well combined.
  4. Spread an even layer of the spinach artichoke mixture over each flattened chicken breast, leaving a small border (about 1/2 inch) around the edges.
  5. Carefully roll up each chicken breast, starting from one end and secure it with toothpicks or twine.
  6. Heat the olive oil in a large oven safe skillet over medium heat. Sear the stuffed chicken breasts on all sides until lightly golden brown.
  7. Transfer the skillet to the preheated oven. Bake for 20 to 25 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  8. Remove the skillet from the oven. Sprinkle the remaining mozzarella cheese over the top of the chicken breasts. Return to the oven for another 2 to 3 minutes, or until the cheese is melted and bubbly.
  9. If desired, sprinkle with paprika for added color and flavor. Remove toothpicks before serving and let it rest for a few minutes before slicing and serving.
