  • 1 cup shredded carrots
  • 1/2 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sesame seeds, toasted
  • 2 green onions, thinly sliced
  • 1/4 cup rice vinegar
  • 2 tablespoons sesame oil
  • 2 tablespoons soy sauce (low sodium)
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 teaspoon sriracha (or more, to taste)
  • 1 tablespoon olive oil

Instructions

  1. Finely shred the green cabbage and place it in a large bowl.
  2. Add the shredded carrots, chopped red onion, chopped cilantro, sesame seeds, and green onions to the bowl with the cabbage. Toss gently to combine.
  3. In a separate small bowl, whisk together the rice vinegar, sesame oil, soy sauce, honey (or maple syrup), grated ginger, minced garlic, sriracha, and olive oil.
  4. Pour the dressing over the cabbage mixture and toss well to coat evenly. Taste and adjust seasonings as needed.
  5. Cover the bowl and refrigerate the slaw for at least 30 minutes before serving.
