- 2 pounds boneless, skinless chicken breasts
- 1 (15 ounce) can kidney beans, rinsed and drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can corn, drained
- 1 (15 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can diced tomatoes and green chilies (like Rotel), undrained
- 1 cup buffalo wing sauce (we prefer Frank’s RedHot)
- 1 (1 ounce) packet ranch dressing mix
- 1/2 cup chicken broth
- 8 ounces cream cheese, cubed
- Optional toppings: shredded cheese, sour cream, green onions, blue cheese crumbles
Instructions
- Place the chicken breasts in the bottom of your slow cooker.
- Add the kidney beans, black beans, corn, diced tomatoes, and diced tomatoes with green chilies to the slow cooker.
- Pour the buffalo wing sauce and chicken broth over the ingredients. Sprinkle with the ranch dressing mix.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until the chicken is cooked through and easily shreds with a fork.
- Remove the chicken breasts from the slow cooker and shred them with two forks. Return the shredded chicken to the slow cooker.
- Add the cubed cream cheese to the slow cooker. Stir until the cream cheese is melted and fully incorporated, creating a creamy texture.
- Serve hot, topped with your favorite chili toppings.
