  • For the Buttercream Frosting:
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • Gel food coloring (optional, for grad colors)
  • Sprinkles, graduation-themed decorations for topping

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Add softened butter, milk, eggs, and vanilla extract. Beat with an electric mixer on low speed until just combined, then increase speed to medium and beat for 2 minutes until smooth and fluffy.
  4. Pour batter evenly into the prepared cake pans.
  5. Bake for 25-30 minutes, or until a wooden skewer inserted into the center comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then invert them onto a wire rack to cool completely.
  7. While the cakes are cooling, prepare the buttercream frosting. In a large bowl, beat softened butter with an electric mixer until light and fluffy.
  8. Gradually add powdered sugar, one cup at a time, beating well after each addition.
  9. Add milk and vanilla extract, and beat until the frosting is smooth and creamy.
  10. If desired, divide the frosting into separate bowls and tint each bowl with gel food coloring to match school colors.
  11. Once the cakes are completely cool, place one layer on a serving plate or cake stand. Frost the top with buttercream.
  12. Place the second cake layer on top of the frosting. Frost the entire cake with remaining buttercream.
  13. Decorate with sprinkles, graduation-themed decorations, or a simple message.
