- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1/2 cup dry white wine
- 1/4 cup ouzo (optional)
- 1 teaspoon dried oregano
- 1/2 teaspoon red pepper flakes
- 4 ounces feta cheese, crumbled
- Fresh parsley, chopped
- Lemon wedges
Instructions
- 1. In a bowl, toss shrimp with 1 tablespoon of olive oil, salt, and pepper. Set aside.
- 2. Heat 1 tablespoon of olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Stir in garlic and cook 1 minute.
- 3. Pour in crushed tomatoes, white wine, and ouzo. Stir in oregano and red pepper flakes. Season with salt and pepper. Bring to a simmer and cook for 15 minutes.
- 4. Gently add shrimp to the simmering soup. Cook for 3 to 5 minutes, or until shrimp are pink and cooked through.
- 5. Stir in half of the crumbled feta cheese.
- 6. Ladle the soup into bowls. Garnish with remaining feta and parsley. Serve with lemon wedges.
