Description

The most easy and flavorful Sheet Pan Chicken Pitas made with smoky paprika and garlic-roasted chicken and caramelized mixed vegetables stuffed into warm pitas with a cool creamy herby ranch made from Greek yogurt and fresh herbs. A completely effortless weeknight dinner ready in 35 minutes.


Ingredients

2 Boneless Skinless Chicken Breasts

1 tbsp Olive Oil

1 tsp Garlic Powder

1 tsp Paprika

Salt and Pepper to taste

1 cup Mixed Vegetables bell peppers onions and zucchini cut into bite-sized pieces

1/2 cup Greek Yogurt

1 tbsp Ranch Seasoning Mix

Fresh Parsley and Dill chopped to taste

4 Pitas soft or lightly toasted


Instructions

1. Preheat oven to 400°F. Line or lightly grease a large sheet pan.

2. Combine olive oil, garlic powder, paprika, salt, and pepper in a bowl. Add chicken and coat completely.

3. Spread chicken and cut vegetables in a single layer on the sheet pan with space between each piece.

4. Roast 20 to 25 minutes until chicken reaches 165°F and vegetables are caramelized.

5. In the final 5 minutes place pitas in the oven to warm.

6. While chicken roasts, combine Greek yogurt, ranch seasoning, and fresh parsley and dill in a bowl. Stir until smooth.

7. Remove chicken from oven and rest 3 to 5 minutes before slicing.

8. Slice chicken into strips or bite-sized pieces.

9. Open warm pitas and layer in chicken and roasted vegetables.

10. Drizzle herby ranch generously over the filling.

11. Finish with extra fresh herbs and a squeeze of lemon if desired. Serve immediately.

Notes

Cut all vegetables to a similar size for even roasting.

Allow chicken to rest before slicing to keep juices inside.

For extra char broil for 1 to 2 minutes at the end of roasting.

Smoked paprika instead of sweet paprika adds deeper smoky flavor.

Store chicken and vegetables separately from herby ranch in the refrigerator for up to 3 days.
