  • 8 ounces cream cheese, softened
  • 1 ½ cups heavy cream
  • 1 teaspoon peppermint extract
  • Green food coloring (gel preferred), a few drops
  • Chocolate shavings, for garnish (optional)

Instructions

  1. 1. Prepare the Crust: In a large bowl, whisk together the flour and salt. Cut in the chilled butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  2. 2. Form the Dough: Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Don’t overmix!
  3. 3. Chill the Dough: Form the dough into a disk, wrap it in plastic wrap, and chill for at least 30 minutes.
  4. 4. Roll Out the Dough: On a lightly floured surface, roll out the dough to a 12 inch circle.
  5. 5. Transfer to Pie Plate: Carefully transfer the dough to a 9 inch pie plate. Crimp the edges as desired.
  6. 6. Bake the Crust (Blind Bake): Preheat your oven to 375°F (190°C). Line the pie crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes. Remove the parchment paper and weights, and bake for another 5 7 minutes, or until the crust is lightly golden.
  7. 7. Cool the Crust: Let the crust cool completely before adding the filling.
  8. 8. Prepare the Filling: In a large bowl, beat the softened cream cheese until smooth.
  9. 9. Add Sweetened Condensed Milk: Gradually add the sweetened condensed milk, mixing until well combined.
  10. 10. Whip the Cream: In a separate bowl, whip the heavy cream until stiff peaks form.
  11. 11. Combine and Flavor: Gently fold the whipped cream into the cream cheese mixture. Add the peppermint extract and green food coloring. Mix until just combined and the desired shade of green is achieved.
