- 1 medium head green cabbage, shredded (about 6 cups)
- 1 large egg, lightly beaten
- 1/2 cup all purpose flour, plus more for dusting
- 1/4 cup grated Pecorino Romano cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- Vegetable oil, for frying
Instructions
- In a large bowl, combine cabbage with salt and massage for 2-3 minutes. Let sit for 10 minutes.
- Squeeze cabbage to remove excess water.
- Add egg, flour, Pecorino Romano, Parmesan, garlic, parsley, and red pepper flakes (if using) to the cabbage. Season with salt and pepper.
- Mix until well combined. Add more flour if too wet.
- Heat 1/2 inch of vegetable oil in a skillet over medium-high heat.
- Form small patties and dust hands with flour to prevent sticking.
- Fry for 3-4 minutes per side, until golden brown and crispy.
- Drain excess oil on a paper towel-lined plate.
- Serve immediately.
