Description

The most delightful Rhubarb Cheesecake Bombs made with golden twice-baked individual cake domes filled with a silky lemon vanilla cream cheese filling and topped with a tangy homemade rhubarb compote. A completely beautiful and creative spring dessert that surprises and delights everyone at the table.


Ingredients

2 cups All-Purpose Flour

1 cup Granulated Sugar

1/2 cup Unsalted Butter softened

2 large Eggs

1 tbsp Baking Powder

1 tbsp Vanilla Extract

1 cup Whole Milk

8 oz Full-Fat Cream Cheese softened

1 cup Powdered Sugar

2 tbsp Fresh Lemon Juice

1 tsp Vanilla Extract for filling

2 cups Rhubarb chopped

1/2 cup Granulated Sugar for compote

1/2 cup Water

1 tbsp Lemon Zest

Powdered Sugar for dusting


Instructions

1. Preheat oven to 350°F. Line muffin tin or baking tray with parchment.

2. Beat softened butter and sugar 3 to 5 minutes until light and fluffy.

3. Add eggs one at a time beating well after each. Stir in vanilla.

4. Whisk flour and baking powder. Add to butter mixture alternating with milk. Mix until just combined.

5. Scoop batter into muffin cups or tray as rounded mounds spaced well.

6. Bake 10 to 12 minutes until just set and lightly golden. Cool completely.

7. Beat cream cheese, powdered sugar, lemon juice, and vanilla until smooth and fluffy. Set aside.

8. Simmer rhubarb, sugar, and water 10 minutes until completely broken down into compote.

9. Stir in lemon zest. Cool slightly.

10. Slice tops off completely cooled cakes. Hollow center slightly if needed.

11. Fill each cake base with cream cheese mixture.

12. Top with a spoonful of rhubarb compote.

13. Return to oven at 325°F for 5 to 7 minutes until warmed through.

14. Replace cake caps. Dust with powdered sugar. Serve immediately.
