The most extraordinary baked Red Velvet Cheesecake made by preheating oven to 325°F wrapping 9-inch springform in 2 to 3 layers heavy foil combining 24 crushed Oreo crumbs and 4 tbsp melted butter pressing firmly into pan and up sides pre-baking 8 minutes cooling then beating 32 oz room temperature cream cheese until silky adding 1 1/4 cups sugar beating combined adding 1 cup room temperature sour cream 2 tbsp cocoa 2 tbsp red gel food coloring 1 tsp white vinegar and 1 1/2 tsp vanilla beating smooth and uniformly deep crimson on low adding 4 room temperature eggs one at a time just incorporated not overmixing pouring over crust placing in roasting pan filling with hot water halfway baking 55 to 65 minutes until edges set and center gently jiggles cooling in water bath 1 hour running knife around edge refrigerating minimum 8 hours then beating 8 oz room temperature cream cheese and 1/2 cup room temperature butter smooth adding 3 cups sifted powdered sugar and vanilla beating fluffy piping decoratively over fully chilled cheesecake. 24 Oreo Cookies crushed to fine crumbs with filling

4 tbsp Unsalted Butter melted

32 oz four 8 oz packages Full-Fat Brick-Style Cream Cheese room temperature

1 1/4 cups Granulated Sugar

1 cup Sour Cream room temperature

2 tbsp Natural Unsweetened Cocoa Powder

2 tbsp Red Gel Food Coloring

1 tsp White Vinegar

1 1/2 tsp Pure Vanilla Extract

4 large Eggs room temperature

8 oz Full-Fat Brick-Style Cream Cheese room temperature for frosting

1/2 cup Unsalted Butter room temperature for frosting

3 cups Powdered Sugar sifted

1 tsp Pure Vanilla Extract for frosting

Pinch of Salt


Instructions

1. Preheat oven to 325°F 163°C. Wrap springform in 2 to 3 layers foil.

2. Combine crushed Oreos and melted butter. Press firmly into pan bottom and up sides. Pre-bake 8 minutes.

3. Beat cream cheese until silky smooth. Add sugar. Beat combined.

4. Add sour cream, cocoa, red food coloring, white vinegar, and vanilla. Beat smooth and uniformly crimson.

5. On low add eggs one at a time just incorporated. Do not overmix.

6. Pour over crust. Place in roasting pan. Fill with hot water halfway up sides.

7. Bake 55 to 65 minutes until edges set and center gently jiggles.

8. Cool in water bath 1 hour. Run knife around edge. Refrigerate minimum 8 hours or overnight.

9. Beat cream cheese and butter smooth. Add powdered sugar and vanilla. Beat fluffy.

10. Pipe decoratively over fully chilled cheesecake.
