Ingredients
5 oz White Chocolate coarsely chopped
1/3 cup Unsalted Butter cut into small pieces
1/2 cup Granulated Sugar
2 large Eggs room temperature
1 tsp Vanilla Extract
3/4 cup plus 2 tbsp All-Purpose Flour
1/4 tsp Salt
1 cup Fresh Raspberries
Instructions
1. Preheat oven to 350°F. Line an 8×8 inch baking pan with foil leaving overhang on two sides.
2. Melt white chocolate and butter together in a heat-proof bowl over simmering water stirring occasionally until smooth. Transfer to a large bowl.
3. Add sugar to warm chocolate mixture and stir to combine.
4. Add eggs one at a time stirring well after each addition. Stir in vanilla.
5. Sift flour and salt over batter. Fold gently until just combined.
6. Fold fresh raspberries through batter in 2 to 3 gentle strokes keeping them whole.
7. Pour batter into prepared pan and smooth the top.
8. Bake 17 to 20 minutes until top is golden and toothpick comes out with moist crumbs.
9. Cool completely on a wire rack before lifting out by foil overhang.
10. Refrigerate 1 hour before cutting for the cleanest squares.
